Vegan Roasted Beet Pockets

Not very good lighting, as I made these for dinner after study tax whitepapers all day. They were delicious though!

Not very good lighting, as I made these for dinner as a treat after studying tax whitepapers all day and I took the picture after dark. They were absolutely delicious, though!

Vegan puff pastry made with vegetable-base shortening, beets roasted in coconut oil and lemon salt, cashew ricotta, and walnuts. Beetroots on top for flair.
