    • Oh my goodness, that brings me back to my grandfather making big pots of onion soup and sticking a thick piece of cheese-covered bread at the bottom. So comforting!

      This soup, which I actually did try out, came out super thick and very crisp-tasting. It was like creamy parsnip soup had a weirdly gorgeous lovechild with green apple pudding. I thinned it out with more water, but not very much. It was surprisingly filling. Turned out to be a very good starter for a French-inspired three-course luncheon.
